I can't believe I'm alive... I originally committed to walking 1 mile 4 times a week for the month of March. Right after I made that commitment, I won a free month of Camp Gladiator. Well, this first week has been TOUGH, and my body seriously hurts all over. But, I DID IT! I walked a mile 4 times this week, and I went to Camp Gladiator twice. I am so proud of myself. I did not want to go to Camp Gladiator the second time because I was so sore, and I definitely did not want to walk, but knowing that I committed to you guys, I had to do it.
It is crazy, but just after this week, I feel stronger. We ran around town all day and met friends for coffee which was super fun. But, that meant that I did not go for my walk until 6:45 tonight when it was already starting to get dark. After having a full day, the last thing I wanted to do was go walk, but I'm glad that I did. I jogged about half of my mile tonight, and I did not feel terrible doing it! I'm really slow.. it took me 18 minutes, but that is vast improvement from where I started even just a year and a half ago when it would take me 30 minutes to walk a mile.
I know that my metabolism is starting to kick in because even when I go walk for a mile, I am starting to sweat. When it is really hot outside, I sweat of course. However, in walking a mile, going slower, I would hardly sweat at all. It feels amazing to be getting stronger and know my body is doing what it needs to do. There is no Camp Gladiator next week, but the trainer told me to keep doing some of the exercises so I don't lose it. As much as they suck, I'm going to do them.
Okay - enough about working out. Let's talk about food!! This week has been so insane that I have not had a chance to make anything new and cool in my +Vitamix. I did remake my salsa last night when we made fajitas! A friend stayed at our house last night, and this morning, we used her protein powder to make breakfast protein milkshakes! Who says you can't have a milkshake for breakfast? It really isn't any different than a protein smoothing in the morning. Her protein power is SO GOOD. It is a chocolate candy cane flavor. I mixed it with my scary lactose free chocolate milk, and it was amazing. I think possibly better than the strawberry chocolate milkshake I made the other day. Here is a pic of the powder and the shake.
Since I've been working from home, I am able to cook breakfast and make my lunch. It has been really nice, and I'm slowly getting more comfortable in the kitchen. I'm not as afraid to throw things in and just see what happens. Not that I've done anything too crazy, but I use to have to have a recipe to boil eggs.. okay not that bad, but close. Unless eggs were in a tortilla covered in cheese, I did not used to be a huge fan. I've learned to throw things in to make them good. One of the new things I've come up with that I really like is egg substitute, 2 slices of ham/Canadian bacon, and a HUGE handful of spinach. I just cook it all together with a little pepper, and it is really good! It is filling and only about 120ish calories! Isn't that insane?
I saw some paleo pancakes on this girl's tumblr that I am dying to try! It is basically a mashed up banana with 2 eggs, and you cook it like a pancake. Maybe tomorrow morning?! (Paleolithic diet consists mainly of fish, grass-fed pasture raised meats, eggs, vegetables, fruit, fungi, roots, and nuts, and excludes grains, legumes, dairy products, potatoes, refined salt, refined sugar, and processed oils - yep I copy/pasted that from Wikipedia. Does this count as a proper citation? Ha.) I will post about them after I make them!
Some people (Heather) have asked to see the dogs in my blog so here they are! Bentley and Lily, our two sweet Corgis. I'm thinking about using the Vitamix to make some dog treats so that I can incorporate them even more :). I'm also hoping that Obsessive Corgi Disorder will put up this pic soon since I submitted it to them as well.
Hope you guys had an amazing week! Even though mine was really hard, it was really good. Time to go relax and spend some time with +Jimmy Ho!
Yay! They are so precious!
ReplyDeleteHey Amber...you ARE doing it! Wish I were there to do all this with you. Your eggs look delicious! I'll have to give it a try. What is the brand and name of that protein powder? I think it says Fastfuel Complete? Also, are legumes not good for you? I thought they were. Shows what I know I guess.
ReplyDeleteYes! The brand is Fastfuel Complete. She buys it from her gym, and it has the name of the Gym, Lifetime Fitness, on the bottle. So, I'm not sure if it is sold anywhere else. You should Google it! I don't follow the Paleo diet, but from what I understand they eat like cavemen/hunters and gatherers ate. Since legumes aren't good when you eat them raw, they aren't included in the Paleo diet. Love you!
